Pomegranate Banana Ice Cream with Chocolate Almond Hard Shell

Hello! I'm here to share a very easy and delicious recipe with you. It involves banana ice cream or nice cream, as some call it. To make it, you process chopped and frozen bananas in a food processor. It magically turns into a creamy ice cream-like treat. The texture is more like soft serve ice cream or frozen yogurt. You can make all sorts of variations of banana ice cream by adding goodies to it. We like adding a splash of almond milk, peanut butter, and strawberries. We are basically obsessed with it in our household. I have one daughter who wants it everyday for lunch, no matter what the weather. If it is a very cold day, we will get extra sweaters on and eat it anyway. The clerks in the grocery store always comment on the large amount of bananas in my cart. The point I am trying to get across is that this stuff is GOOD and good for you. So don't let your life go by without trying it. The recipe I have for you here is another variation of it. I decided to add pomegranate juice because it is healthy and makes a lovely color. And of course all sweets need to be topped with chocolate. 
 

Ingredients

Pomegranate Banana Ice Cream:
8 bananas, chopped and frozen
1 1/2 cups pomegranate juice, cold pressed is best

Chocolate Almond Hard Shell:
1 cup vegan chocolate chips
1 Tbsp coconut oil
1/2 tsp almond extract

Directions

Pomegranate Banana Ice Cream:
Place frozen bananas and pomegranate juice in a food processor. Process until smooth and creamy. Scoop into your favorite bowl. Add toppings and serve immediately. 

Chocolate Almond Hard Shell:
Place chocolate chips and coconut oil into a small saucepan over medium heat. Stir constantly until melted. It should just take a couple minutes. Turn off heat and stir in almond extract. Allow chocolate mixture to cool 2-3 minutes and then pour over ice cream. Voila!
