Spaghetti with Spicy Vegan Meat Sauce and Homemade Parmesan

Spaghetti with meat sauce is such a classic dish. I am so glad I have the chance to share a vegan alternative. And guess what... I love cows. I really do! They are so intelligent and sweet. The thought of one suffering for someone's meal, breaks my heart. So let's eat less cows and more plants. This meal is super hearty and satisfying. Give it a try!
 

Ingredients

16 oz of spaghetti (I used angel hair)

Spicy Vegan Meat Sauce:
3 cups pecans, soaked overnight
1/2 cup sun-dried tomatoes in oil
1.3 oz taco seasoning (I used Trader Joe's)
2 24.oz jars of pasta sauce (My favorite is Rao's Homemade)

Homemade Parmesan:
2 cups almonds
1/4 cup nutritional yeast
1 tsp sea salt
1/4 tsp onion powder
1/4 tsp garlic powder

Directions

Homemade Parmesan:
Combine almonds, nutritional yeast, sea salt, onion powder, and garlic powder in a food processor. Process until crumbly. Store in an airtight container in the refrigerator until ready to use. 

Spicy Vegan Meat Sauce:
Soak pecans in purified water overnight. In the morning, drain the water. Process pecans, sun-dried tomatoes, and taco seasoning in food processor until they have a meat-like texture. Heat a saute pan and add vegetable oil. Saute pecan mixture on medium heat for about 5 minutes. Add the 2 jars of pasta sauce. Stir and heat thoroughly. 

Spaghetti:
Cook spaghetti according to manufacture's instructions. Top with Spicy Vegan Meat Sauce, Homemade Parmesan, and fresh basil. Serve and enjoy!
